When it comes to eating healthy, having a few tricks up your sleeve is a must. For me, keeping tempting things like chips and sweets out of the house helps quite a bit. It's much harder to cram old Halloween candy down my throat when my husband is holding up an apple and saying, "Don't you think this would make you happier?" I suppose that depends on your definition of happiness, doesn't it?

I stop eating when I feel semi-full. That way, I can save the rest for future meals and make two or three meals out of one.
I specifically keep a calorie journal. Since I have the personal policy of “nothing enters my mouth until AFTER the calories are recorded,” it really brings up the question of just how much I really want that oreo. Most of my discipline gets used up with going to the gym, so my lazy streak rebels by not wanting to go through the effort of looking up calories. I find I usually pass on that oreo more often than not. Too much effort for just a cookie.
I also believe in overload as opposed to deprivation. If I give myself a lot of healthy food options that I like, I usually can’t make up my mind. Hence, I still don’t eat anything until I’m hungry enough to pick one. This helps cut back on snacking out of boredom.
